No Bake Turtle Cookies

These "No Bake Turtle Cookies" are the perfect chocolate oatmeal no bake cookies topped with thick caramel, pecans and a drizzle of chocolate. This cookie recipe takes no bake cookies to a whole new level.

These no bake turtle cookies are crunchy, chewy, chocolatey caramel perfection, and the best thing is they are way too easy to make! Itís important for this recipe that you use a dulce de leche or very, very thick caramel, like the caramel recipe on the site. If you use a premade caramel sauce, it will slide off and be very messy. When youíre forming the no bake turtle cookies, you ideally want them pretty flat so that they are easy to spread with caramel and the pecan wonít slide off the top. If you have time to make a slight indentation before the cookies firm up, thatís a good idea. Remove the label from one or more cans of sweetened condensed milk and place in a pot and cover with water. Bring to a boil and simmer for three hours, making sure the can is completely covered with water the entire time. Remove from the water and let cool completely before using. Make sure the cookie base sets nice and firm so that it won't be a complete mess in your hands. For this recipe quick oats were used, large oats won't change the recipe much except that you will have even more texture in your cookies.

Pecans are also a good source of protein, iron and B vitamins. Their fat content is made up mainly of the monounsaturated fat, oleic acid and the polyunsaturated fat, linoleic acid.
