To start you will place the sugar and water in a medium saucepan over medium heat, and gently stir until the sugar has dissolved. Rinse and dry the spatula before using again. Using a wet pastry brush, slowly brush down the sides of the pan to dissolve the remaining sugar crystals. Increase the heat and bring the caramel sauce recipe to a boil without stirring. Allow the sauce to bubble away until the mixture turns to an amber colored liquid, then remove the pan from the heat, being careful not to burn the sugar. Slowly pour the cream into the sugar, being careful as you do this as the liquid will bubble up and might splatter a little, stir slowly until the mixture is well combined. Add in the butter, and put the pan back on the heat, stirring until the butter is completely melted and the caramel sauce is smooth. Cool down the caramel sauce recipe completely before using or transferring to a container. The caramel sauce can be stored in the refrigerator up to seven days. It will become thicker as it sits in the refrigerator, and if you prefer the sauce a little runnier, reheat and add some heavy cream to the mixture.
